VIVA ULTRA BREAD
Viva Ultra Bread is a small cottage bakery located in Spokane WA. Established at the beginning of the pandemic in Mar Vista CA, we baked 28 loaves every Saturday and sold them to a dedicated community of bread lovers. We made four loaves at a time in our apartment’s electric oven. In the fall of that year, the wife and I decided to make a big life change and move to Spokane WA. We settled on leaving LA in April of 2021 and starting anew after 18 years of “We Love LA” vibes. Upon arriving in Spokane, we realized and learned, that we had begun our new life in one of the largest grain and lentil growing regions in the world, the Palouse Valley. We made contact with Palouse Heritage and fell for the grain that they grow. Next we contacted Cairnsprings Mill in the Skagit Valley and decided on their “Trail Blazer” bread flour. We got legit with the WSDA and formed Viva Ultra Bread LLC with the State of Washington and we began to bake bread. Before we knew it we were a part of the incredible market community of Spokane, selling bread at 3 farmers markets from June 2021 to now.
We freshly mill a blend of wheat berries ( Sonora(Palouse Heritage) and Sequoia(Moon Family Farm). 30% fresh milled grain goes in to each loaf of bread that we make and we don’t sift any of the whole wheat flour that we mill in our Mockmill 200 Pro. We believe that the combination of the fresh milled flour, the “Trail Blazer” bread flour from Cairnsprings Mill, filtered water and sea salt make an incredibly delicious loaf of bread!! Our bread is naturally leavened with our sourdough starter “Danzig”!!!
